Background

The idea of creating a chocolate tasting experience featuring bon bons inspired by ingredients grown or produced in Nova Scotia originates with the values at the heart of ROUSSEAU Chocolatier – quality, authenticity and community. As a young couple, Nathalie and Julien knew they wanted to build a business together, but they weren’t sure exactly what and where. They went on a grand European adventure to figure things out.
Julien had already trained as a chocolatier (in fact, his father is also a chocolatier) and, working alongside great chocolatiers in Southern France, England and even the remote corners of Scotland, Nathalie and Julien deepened their understanding of the traditions of chocolate making and were inspired by the passion for quality and craftmanship, sense of place and community. This European immersion informed their vision for ROUSSEAU Chocolatier. Now, they bring this legacy to life in the new world, crafting extraordinary artisanal chocolate with exceptional, locally sourced ingredients and actively engaging with their community.

What is Flavours of Place?

  • The host introduces guests to each chocolate in an interactive, engaging way highlighting the ingredients, how they are carefully used and interpreted by Julien and often, the stories behind the products.

What can guests learn?
  • The experience introduces guests to chocolate and the ingredients in a thoughtful, interactive and creative way – teaching about flavour, aroma and texture.
  • They learn about the connection between chocolate, local ingredients and place and how ingredients influence flavour profiles.
  • ROUSSEAU exclusively uses premium chocolate from Cacao Barry, founded in France in 1842. Guests learn the basics of where cacao comes from and how it is made.
  • The inspiration behind some of our signature chocolates

When do the tastings take place?
  • Offered throughout the year at our Halifax chocolate shop
  • Dates are scheduled regularly based on demand and seasonality
  • Private and group (max 8) bookings may also be available

  • Hosting and guided chocolate tasting, featuring six handcrafted Nova Scotia-inspired chocolates
  • Choice of hot chocolate, espresso, or a cold drink
  • Dates offered: Available year-round, Tuesday through Saturday, 11 a.m. – 4 p.m.
  • Package duration: 45-60 minutes
  • Package price: $50 +HST per person
