Our 2025 Easter Collection really hits the high notes… spring pastels, a collection of eggs, covered nuts, bunnies, and other barnyard animals that are as appealing to the eye as they are to the tastebuds. We are sure you’ll find the perfect creations to add to your Easter table, hide for someone special – maybe even yourself.

“Friture” – a French Easter tradition
Are you curious why we fill many of our Easter creations with our Sea Beings?
Well, it’s a nod to Julien’s French heritage and it’s something we’ve honoured from the very beginning of Rousseau Chocolatier. In France, fish and sea creatures are also a symbol of Easter and it’s a tradition to fill Easter chocolate creations with ‘friture’ – creatures from the sea. So, we fill many of our Easter creations with our own Sea Beings - solid chocolate sea horses, fish, and seashells.
Perhaps a French tradition perfectly at home in Nova Scotia. Whatever your plans for Easter and this refreshed time of year, we wish you time to connect, to make memories, to share kindness and to savour time with those who are most important to you.
